Cranberry Pecan Rice Salad

Holiday side dishes are very filling. Even the vegetable sides usually seem to be smothered in butter, oil, cheese, etc. And if you replace those things with plant based versions, it’s still very heavy stuff that weighs you down and puts you in that (all too well known) food coma. Am I right? I wanted to make a side dish that is hearty, but not heavy, and this Cranberry Pecan Wild Rice Salad is the perfect thing. This salad is nutty, tangy, sweet and packed with protein, vitamins and minerals. It’s also very easy and almost all of the cooking time is hands off. Be sure to include this dish on your Thanksgiving table this year!



  • 4 tablespoons apple cider vinegar
  • 2 tablespoons lemon juice
  • 2 teaspoons crushed garlic
  • 2 teaspoons Dijon mustard
  • 2/3 cup vegetable oil
  • 1 teaspoon pepper


  • 2 cups cooked rice
  • 1/2 cup dried cranberries
  • 1 cup roasted pecans, chopped
  • 1/2 teaspoon ground ginger
  • 1 teaspoon orange zest
  • Wedges of a seedless orange or tangerine
  • 3 tablespoons sugar
  • 1 green onion, chopped
  • 1 celery stalk, chopped
  • 1/4 red onion


  1. Toss all ingredients together with 1/2 of the dressing
  2. Cover and chill 30 minutes. Reserve the rest of the dressing for time of service
