Sesame Kale Salad

This bright, fresh salad with less than 400 calories is packed with proteinfull of color and can be enjoyed year-round. A vinaigrette with sesame oil and fresh ginger adds just the right balance of sweet and savory.

  1. In a small bowl, whisk together oil, vinegar, juices, ginger, and honey.
  2. Season with salt and pepper.
  3. In a medium bowl, toss kale, cabbage, carrot, quinoa, red onion, and sesame seeds.
  4. Drizzle with dressing and season with salt and pepper. Serve immediately.
